Classic Curry Lentils Over Liviva Instant Rice

Health-conscious and flavorful, this comforting curry pairs perfectly with Liviva Shirataki Instant Rice for a satisfying meal.

Ingredients:

1 cup uncooked lentils, rinsed
1 package Liviva Shirataki Instant Rice
2 tablespoon extra virgin olive oil
2 large cloves garlic, minced
½ large onion, finely chopped
16 ounces tomato/ or pasta sauce
1 can coconut milk
2 teaspoons curry powder
1 teaspoon garam masala
½ teaspoon ground ginger
1 teaspoon garlic powder
½ teaspoon turmeric powder
Salt, to taste
(Green Onion / cilantro (for garnish)

Instructions:

Cook the Lentils:
In a medium saucepan, bring 3 cups of water to a boil. Add the lentils, reduce the heat to a simmer, and cook for 20–25 minutes or until tender. Drain any excess water and set aside.

Prepare the Rice:
Heat the LIVIVA Shirataki Instant Rice according to package instructions. Set aside and keep warm.

Prepare the Curry Base:
Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until softened and fragrant (about 3–4 minutes).

Build the Flavor:
Stir in the curry powder, garam masala, ground ginger, garlic powder, and turmeric. Cook for 1 minute to toast the spices and release their aroma.

Simmer the Curry:
Add the tomato sauce and coconut milk, stirring well to combine. Bring to a gentle simmer and cook for 5–7 minutes until the sauce thickens slightly.

Combine Lentils and Sauce:
Add the cooked lentils to the skillet, stirring to coat them in the curry sauce. Simmer for an additional 5 minutes, or until the sauce condenses to a rich texture, allowing the flavours to meld. Adjust salt to taste.

Serve:
Spoon the curry lentils over warm Liviva Shirataki Instant Rice. Garnish with fresh green onion or cilantro if desired.

Tips:
For extra heat, add a pinch of cayenne!
