Crunchy Liviva Rice Salad with Peanut-Tahini Dressing!

Ingredients:
• 1 pack Liviva instant rice ( 120g ), cooked drained and cooled
• 1 cup frozen edamame, thawed
• 1 ½ cups green cabbage, thinly sliced
• 1 carrot, shredded
• ½ red pepper, thinly sliced
• ½ orange pepper, (optional)
• 1 small cucumber, diced
• 1 green apple, diced
• ¼ cup green onions, chopped
• ½ cup fresh cilantro, chopped
• ¼ cup roasted cashews
• ¼ cup walnuts halves (optional)

For the crispy LIVIVA Rice:
• 1 tablespoon olive oil
• 1 teaspoon soy sauce
• 1 teaspoon rice vinegar
• ½ teaspoon ground cumin
• ½ teaspoon dried garden mint
• Salt and pepper to taste

Dressing:
• 2 tablespoons peanut butter
• 1 tablespoon tahini
• 2 tablespoons rice vinegar
• 1 tablespoon soy sauce
• 1 tablespoon toasted sesame oil
• 1 tablespoon maple syrup
• 1 clove garlic, minced
• 1 teaspoon grated fresh ginger
• 2 tablespoons warm water to thin

Instructions:
1. Season and bake the Liviva rice:
- Preheat the oven to 375°F (190°C).
- Spread the cooked and cooled Liviva rice on a baking sheet lined with
parchment paper.
- Drizzle with olive oil, soy sauce, rice vinegar, cumin, dried mint, and a
pinch of salt and pepper. Toss to coat the rice evenly.
- Bake for about 15-20 minutes, stirring halfway through, until the rice is
crispy and golden. Keep an eye on it to avoid burning. Once crispy, set
aside to cool.
2. Prepare the vegetables:
- In a large bowl, combine the cabbage, edamame, shredded carrot, red
pepper, orange pepper, cucumber, apple, green onions, and cilantro.
3. Make the dressing:
- In a small bowl, whisk together the peanut butter, tahini, rice vinegar,
soy sauce, sesame oil, maple syrup, garlic, ginger, and sriracha. Add
water as needed to thin to your preferred consistency.
4. Assemble the salad:
- Add the cooled crispy Liviva rice to the bowl with the veggies.
- Pour the dressing over the salad and toss everything until well-coated.
5. Add the crunch:
- Stir in the chopped peanuts and walnuts (if using).
- If you like, you can also garnish with additional mint or cilantro.
6. Serve:
- Serve immediately to enjoy the crunch of the baked Liviva Shirataki
Rice!
