
Edamame Pasta with Roasted Vegetables

Ingredients

1 package
LIVIVA Organic Edamame Spaghetti

1 cup diced
Yellow Zucchini

1 cup diced
Zucchini

1 cup diced
Red onion

1 cup diced
Red bell pepper

1 cup
Halved cherry tomatoes

1 teaspoon
Garlic salt

1 tablesoon
Olive oil

1 cup
Fresh parsley

1 piece
Lemon
DIRECTIONS
01Preheat oven to 400°F.
02Toss your veggies with olive oil and your choice of either garlic salt or salt/pepper.
03Put your veggies into a roasting pan.
04Bake at 400°F for 15 minutes.
05While your veggies are cooking, prepare the pasta according to package directions.
06When veggies are cooked, toss with pasta.
07Top mixture with the juice from one lemon half.
08Top with parsley and serve!
