Shrimp with Roasted Cherry Tomatoes over Black Bean Spaghetti

Black Bean Spaghetti

4 cups

Cherry tomatoes

4 cloves

Garlic sliced thin

1/3 cup

Fresh basil leaves

2 tablespoons

Olives oil

1/2 teaspoon

Freshly ground black pepper

12 ounces

Large raw strimp peeled

1/2 teaspoon

Red pepper flakes

1 piece

Lemon cut into for wedges


01Preheat oven to 400°F.

02Place the tomatoes, garlic, and basil on a lightly greased baking sheet. Drizzle with 1 tablespoon olive oil and 1/4 teaspoon black pepper.

03Roast for 20 minutes or until tomatoes are slightly wrinkled.

04While the vegetables cook, bring a large pot of salted water to a boil and prepare the black bean pasta as instructed on the package.

05Place the shrimp in a medium bowl and toss with the remaining 1/4 teaspoon black pepper, red pepper flakes, and ½ tablespoon of olive oil.

06Heat a large saute pan over medium-high and add the shrimp. Cook the shrimp, 2-3 minutes per side.

07Divide the pasta in each bowl, top with tomatoes and their juices, and then with shrimp.

08Serve each with a lemon wedge.
