
Soybean Pasta with White Sauce
This delicious recipe is quite easy to make, even for those short on time! It's simple, yet elegant, and perfect for a festive gathering or dinner for the family. The sauce may be rich, but it's not overwhelming, and it works perfectly paired with hearty white beans, fresh spinach, and bits of roasted red pepper.

Ingredients

2 packages
Liviva Organic Soybean Fettuccine

2 cups chopped
Fresh spinach

15 3/4 ounces
Great northern beans
(drained and rinsed)

1/2 cup
Unsweetened, plain soy milk

1/4 cup
Nutritional yeast

1 tablespoon
Olive oil

1 tablespoon
Apple cider vinegar

1 teaspoon
Yellow mustard

1/4 teaspoon
Garlic powder

1 teaspoon
Salt
Directions
01Cook the soybean fettuccine according to package directions.
02Wash and chop the spinach.
03Line the colander with spinach at the bottom and use it to drain the cooked pasta, allowing the heat from the water to wilt the spinach.
04Rinse the pasta and spinach with cold water to stop the cooking.
05Put all the beans, soy milk, yeast, olive oil, vinegar, mustard, garlic powder, and salt into a blender or food processor and blend until smooth.
06Return the fettuccine and the sauce to the pan.
07Stir to combine, heart on low until it is warmed.
